O objetivo \u00e9 que a carne fique bem envolvida no tempero. Reserve. (Se poss\u00edvel tempere a carne cerca de 2horas antes de a cozinhar).<\/p><p>Lave bem as batatas e, sem tirar a casca, corte em pequenos cubos e envolva as batatas em 1 colher de sopa de azeite. Frite as batatas.<\/p><p>Numa ca\u00e7arola coloque um fio de azeite, 5 dentes de alho laminados e alguns p\u00e9s de coentros picados. Deixe que cozinhe ligeiramente e adicione-lhe as am\u00eaijoas. Tape e deixe que abram.<\/p><p>Quando estiverem todas as am\u00eaijoas abertas, retire do lume e reserve.<\/p><p>Na mesma ca\u00e7arola, junte mais um fio de azeite, os restantes alhos laminados, as folhas de louro partidas ao meio e os p\u00e9s de coentros picados. Deixe cozinhar ligeiramente.<\/p><p>Adicione a carne de Per\u00fa e cozinhe bem a carne em lume m\u00e9dio\/alto.<\/p><p>Quando a carne estiver cozinhada adicione-lhe as am\u00eaijoas e envolva bem. Desligue o lume e adicione-lhe as batatas fritas e coentros frescos picados.
