Potato crumble

A dessert with potato and caramelized apple that will surprise you

INGREDIENTS

  • 2 medium-sized apples
  • 200g sugar
  • 50g butter
  • 1 moderately firm-fleshed potato, peeled
  • 180g wheat flour, sieved
  • 150g brown sugar
  • 150g iced butter, cubed

METHOD

Peel the apples and cut into medium-sized cubes

Make a caramel sauce and add the chopped apples, mixing well

When the caramel is dissolved and well mixed with the apple, remove from the heat and add the butter, mixing well to dissolve

Put the apple mixture in a ceramic or earthenware dish and leave to cool

Now prepare the crumble. Start by baking the potatoes on a low heat (180ºC) and once cooked, mash them

Put the mash into a clean cloth and squeeze, draining the remaining water. There will be left over dry potato dough. Save this preparation

Carefully mix the potato dough with the other ingredients until it resembles breadcrumbs

Cover the caramelized apples with the potato crumble and bake in the oven at 180ºC for 20 minutes
